Raspberry Vinaigrette
Ingredients
- 1 cup raspberries
- 1 Tablespoon white sugar
- 2/3 cup balsamic vinegar
- 1/4 cup olive oil
- 1 Tablespoon honey
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil leaves, finely chopped (optional)
Directions
Macerate the raspberries with the sugar in a bowl; set aside until the mixture is juicy, about 10 minutes. Mash the berries using a fork until liquefied. Pour the berry mixture into a jar with a lid; add the remaining ingredients. Cover jar with lid and shake until dressing is mixed well. Store in the refrigerator.
